Grilling the perfect steak

I'm a bit of a steak snob. I always grill on charcoal. Let the steaks sit for about 45 minutes out of the fridge before grilling them. And make sure your grill is HOT. I like the sear to be even greater than it was in in this video. If you notice, he has new coals on top of the red hot coals, which is why his sear wasn't so great on a couple of the steaks.
